Coriander Tomato Chutney / Dip

Limitless number of dips / chutneys can be made from almost any combination of vegetables, fruits, herbs and spices. The refreshing taste of fresh coriander with a combination of onion and tomato in this simple chutney makes a great accompaniment to a lot of dishes, served with any meal.

CORIANDER TOMATO DIP / CHUTNEY

Prep time: 20 min | Cooking time: 10 min | Serves: 4

  • 1 small bunch coriander leaves
  • 2 medium tomatoes, chopped
  • 1 small onion, chopped
  • 1-2 medium jalapeno peppers or another green chili of your choice
  • 2 tbsps. lemon or lime juice
  • 1 clove garlic (optional)
  • 3/4 inch fresh ginger
  • 1 tsp. salt

Cut off about an inch from the end of the stems of the coriander. Rinse well, chop coarsely. Put the coriander along with the rest of the ingredients in a blender or use an immersion blender to grind to a paste. Taste and adjust the seasonings. (The heat from the peppers goes down a bit with time). Serve with any meal.
